材料
Bread flour 500g
Water 400ml
Oil 40ml
Yeast 10g
Salt 10g
做法 (天氣温度約20度)
- Mum86 (1-2speed, 8-10mins) 混合所有材料,用方形模具,放olive oil。發酵1.5hrs (放Bosch oven - 35度發酵模式)/ 預早一日放雪櫃發酵
- 麵團分4份,向內摺成方形,(35度)發酵30mins
- 底面倒轉麵團,鬆弛20mins
- 上下火220度,放level 2,入爐後加蒸氣level 3,焗25mins
- 今次另加入basil香草
- 下次Dusting 可用rye flour
