Bacon onion bread

液種 (prepare one-day before)

120g all-purpose flour
100g cool water
1g yeast

麵團

400g all-purpose flour
250g lukewarm water
液種
7g yeast
8g salt

Filling

pan-fried minced bacon & chopped onion


Dough rest ~ 2 hrs at room temp. ~20oC

Dough mixed filling, then divide into 8 baguettes rest 1 hr


pre-heat baking stone 30mins at 230 (top/bottom)
turnover the loaf slashes the loaf just before load into oven 
add steam level 3 for the 1st 5min, total bake 25mins
